Ingredients

Dry:

– 1¼ cups all-purpose flour

– ½ teaspoon baking soda

– ½ teaspoon baking powder

– ¼ teaspoon salt

– ½ cup semi-sweet chocolate chips

Wet:

– ¼ cup unsalted butter, softened

– ⅓ cup brown sugar

– 1 large egg yolk

– ½ cup blended cottage cheese (2% or 4%)

– 1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, combine flour, baking soda, baking powder, salt, and chocolate chips.

3. In a large bowl, beat the butter and brown sugar using a hand mixer for about 4 minutes until light and fluffy.

4. Add the egg yolk and mix until fully incorporated.

5. Add blended cottage cheese and vanilla extract. Mix until smooth.

6. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.

7. Scoop 1.5 tablespoons of dough onto the baking sheet, leaving space between each.

8. Gently press each dough ball to flatten slightly.

9. Bake for 10–12 minutes, or until the edges are golden and centers look just set.

10. Let cookies rest on the baking sheet for 2–3 minutes before transferring to a cooling rack.
