- 8 eggs
- 1 cup cottage cheese

- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ cup shredded cheese (cheddar, Swiss, or Monterey Jack)
- 1 cup mix-ins of choice (spinach, bell peppers, broccoli, chicken sausage, etc.)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or line with silicone liners.
- Blend the Base: In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth and slightly frothy.
- Fold in Flavor: Pour the mixture into a mixing bowl and stir in shredded cheese and your favorite mix-ins.
- Fill and Bake: Divide mixture evenly among muffin cups, filling each about ¾ full. Bake for 20–25 minutes or until centers are just set and edges are lightly golden.
- Cool and Store: Let cool in the pan for 5–10 minutes. Remove and serve immediately or refrigerate/freeze for later.
Notes
Use a high-speed blender to achieve that smooth, Starbucks-like texture. For meal prep, let cool completely before storing. You can also underbake slightly if you plan to freeze and reheat later. Avoid wet mix-ins like raw tomatoes or mushrooms unless pre-cooked.
