These Cottage Cheese Egg Bites are the ultimate high-protein, low-carb breakfast you can meal prep in minutes. Creamy, fluffy, and fully customizable, they’re baked—not sous vide—and still deliver that luxurious texture you love from coffeehouse versions. Perfect for busy mornings, low-carb living, or snacking smart.

  • Total Time: 35 minutes
  • Yield: 12 egg bites

Ingredients

Scale
  • 8 eggs
  • 1 cup cottage cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup shredded cheese (cheddar, Swiss, or Monterey Jack)
  • 1 cup mix-ins of choice (spinach, bell peppers, broccoli, chicken sausage, etc.)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or line with silicone liners.
  2. Blend the Base: In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth and slightly frothy.
  3. Fold in Flavor: Pour the mixture into a mixing bowl and stir in shredded cheese and your favorite mix-ins.
  4. Fill and Bake: Divide mixture evenly among muffin cups, filling each about ¾ full. Bake for 20–25 minutes or until centers are just set and edges are lightly golden.
  5. Cool and Store: Let cool in the pan for 5–10 minutes. Remove and serve immediately or refrigerate/freeze for later.

Notes

Use a high-speed blender to achieve that smooth, Starbucks-like texture. For meal prep, let cool completely before storing. You can also underbake slightly if you plan to freeze and reheat later. Avoid wet mix-ins like raw tomatoes or mushrooms unless pre-cooked.
