This Cottage Cheese Fudge is a rich, creamy, protein-packed dessert made with just 6 simple ingredients. It’s a guilt-free chocolate treat that sets beautifully and satisfies your sweet tooth with fewer carbs and more nutrition. Perfect for healthy snacking, fitness-focused eating, or smart meal prep.

  • Total Time: 10 minutes + chill time
  • Yield: 16 small squares

Ingredients

Scale
  • 2¼ cups (500 g) cottage cheese, full-fat preferred
  • 8.8 oz (250 g) dark chocolate (70% cocoa or more), chopped
  • ⅓ cup (33 g) unsweetened cocoa powder (optional, for stronger chocolate flavor)
  • 2 tablespoons (30 ml) coconut oil (optional, helps fudge firm up)
  • Pinch of sea salt (optional)
  • Optional add-ins: crushed nuts, peanut butter swirls, dried fruit

Instructions

  1. Blend Cottage Cheese: Add cottage cheese to a blender or food processor. Blend until completely smooth and creamy. Set aside.
  2. Melt Chocolate: In a double boiler or microwave-safe bowl, melt the chopped dark chocolate and coconut oil together, stirring until smooth.
  3. Combine Ingredients: In a large bowl, combine melted chocolate, blended cottage cheese, cocoa powder (if using), and a pinch of sea salt. Mix until silky and fully incorporated.
  4. Add Optional Extras: Gently fold in any mix-ins like chopped nuts or dried fruit if desired.
  5. Pour and Smooth: Line a small baking tray or loaf pan with parchment paper. Pour in the fudge mixture and smooth the top with a spatula.
  6. Chill to Set: Refrigerate for 4–6 hours or freeze for 1–2 hours until fully set. Slice into squares and serve.

Notes

Use high-quality dark chocolate for the best flavor and texture. For smoother results, always blend cottage cheese thoroughly. Store in an airtight container in the fridge for up to 7 days or freeze for up to 3 months. Let thaw slightly before serving if frozen.
